Badger State Muffins

Ingredients
- 1 cup shredded apple
- 1/2 cup craisins or cranberries
- 1/2 cup shredded carrot
- 1/2 cup chopped walnuts or pecans
- 1 cup fresh or thawed blueberries
- 1/4 teaspoon salt
- 1-1/4 cup whole wheat flour
- 1-1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground coriander
- 1 egg
- 1/2 cup vegetable oil
Instructions
- Preheat oven to 375 F. In small bowl, mix flour, baking powder, baking soda, cinnamon, coriander and salt. In large bowl, combine apple, craisins, carrot, nuts and blueberries. Stir the contents of the two bowls together until well mixed. In small bowl, beat together egg and oil. Add mixture into large bowl until mixed together. Put into paper cup lined muffin pan. Bake 22 minutes.
