Citrus Basil Grilled Chicken Salad
Ingredients
- 4 C. grilled chicken breast diced
- 1/2 C. Celery minced
- 2 T. fresh basil leaves chopped
- 1/4 C. slivered almonds or choped pecans
- 1/2 C. sour cream
- 1/2 C. Mayonnaise
- 1 tsp. fresh lemon juice
- 1 tsp. fresh orange juice
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
Instructions
- In a medium bowl, combine chicken, celery, basil and nuts.
- In a small bowl mix together sour cream, mayonnaise, lemon and orange juices, salt and pepper.
- Add to the chicken mixture, tossing gently to coat.
- Cover and chill for 30 minutes before serving.
