Goulash

Ingredients

  • 2 pounds ground beef or turkey
  • 3 teaspoons garlic minced
  • 1 large Yellow onion diced
  • 1/3 cup olive oil
  • 2-1/2 cups Water
  • 1/2 cup beef broth
  • 2 15- ounce cans Tomato sauce
  • 2 15- ounce cans diced tomatoes
  • 1 tablespoon Italian seasoning
  • 1 tablespoon Adobo seasoning
  • 3 bay leaves
  • 1 teaspoon seasoned salt
  • 1/2 tablespoon ground black pepper
  • 2 cups elbow macaroni uncooked
  • 1/2 cup shredded Cheddar cheese
  • 1 cup shredded mozzarella cheese

Instructions

  • In a large pan, saute meat over medium high heat until half cooked, remove from heat.
  • Add garlic, onion, olive oil and continue to cook until meat is fully cooked. Add water, broth, tomato sauce, diced tomatoes, Italian seasoning, bay leaves, seasoned salt, pepper and adobo seasoning. Mix well.
  • Lower heat and cover, allow to cook for about 20 minutes, stirring occasionally.
  • Add uncooked macaroni to pan, stir well, cover and allow to simmer for 30 minutes. Remove bay leaves. Add cheddar cheese and mix.
  • Just before serving, add mozzarella cheese.

Alfredo Pasta with Smoked Sausage and Veggies

Ingredients

  • 1 tablespoon olive oil
  • 1 16- ounce package skinless smoked sausage sliced
  • 4-5 slices Bacon cooked and chopped
  • 1/2 cup onion chopped
  • 2 cups dry pasta rotini, shells, bowtie, elbow cooked according to package directions
  • Vegetables of your choice blanched broccoli or cauliflower cooked carrots, canned green beans, corn, etc.
  • 1/4 cup honey optional

Alfredo Sauce

  • 1/2 cup butter
  • 1-1/2 cups heavy whipping cream

Instructions

  • Cook pasta and drain.
  • In large, deep skillet, add olive oil. Over medium heat, add smoked sausage slices and lightly brown. Add vegetables of choice, cover with lid, stirring occasionally.
  • To make Alfredo sauce, add butter and cream to large skillet. Simmer over low heat for 2 minutes. Whisk in garlic and seasonings, and cook for one minute. Whisk in Parmesan cheese and cook until melted.
  • Mix Alfredo sauce with pasta and add to skillet with sausage and vegetables. Stir and cover for 2 minutes. If desired, add honey.
  • Sprinkle with bacon and serve with garlic bread.
