Bread and Butter Pickles

Servings 2.5 cups

Ingredients

  • 1 large cucumber sliced into 1/4-inch-thick rounds
  • 1 medium-sized onion sliced into thin rounds
  • 1 cup granulated sugar
  • 1/2 cup white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon celery seeds
  • 1/4 teaspoon turmeric

Instructions

  • Mix all ingredients in a 2-quart microwave-safe bowl. Microwave on high for 8 minutes, stirring every 3. Cucumbers should be crisp-tender and onions translucent.
  • Ladle into a glass jar rinsed with hot water to prevent cracking. Cover, cool slightly and store in the refrigerator.
