Bread and Butter Pickles

Servings 2.5 cups
Ingredients
- 1 large cucumber sliced into 1/4-inch-thick rounds
- 1 medium-sized onion sliced into thin rounds
- 1 cup granulated sugar
- 1/2 cup white vinegar
- 1 teaspoon salt
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon celery seeds
- 1/4 teaspoon turmeric
Instructions
- Mix all ingredients in a 2-quart microwave-safe bowl. Microwave on high for 8 minutes, stirring every 3. Cucumbers should be crisp-tender and onions translucent.
- Ladle into a glass jar rinsed with hot water to prevent cracking. Cover, cool slightly and store in the refrigerator.
