Cheeseburger Soup

Ingredients
- 3/4 cup onion chopped
- 3/4 cup carrots shredded
- 3/4 cup celery diced
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 4 tablespoons butter divided
- 1/2 pound ground beef cooked and drained
- 3 cups chicken broth
- 4 cups potatoes diced
- 1/4 cup flour
- 4 ounces Velveeta cheese
- 1-1/2 cups milk
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup sour cream
Instructions
- In 3-quart saucepan, saute onion, carrots, celery, basil and parsley in 1 tablespoon of butter. Add beef, broth and potatoes and bring to a boil. Reduce heat, cover and simmer 10 to 12 minutes.
- Meanwhile, in small pan, melt remaining butter and stir in flour. Add to soup and return to a boil. Cook and stir for 2 minutes.
- Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir until cheese melts.
- Remove from heat and blend in sour cream. Serve.
