Cheeseburger Soup

Ingredients

  • 3/4 cup onion chopped
  • 3/4 cup carrots shredded
  • 3/4 cup celery diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 tablespoons butter divided
  • 1/2 pound ground beef cooked and drained
  • 3 cups chicken broth
  • 4 cups potatoes diced
  • 1/4 cup flour
  • 4 ounces Velveeta cheese
  • 1-1/2 cups milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup sour cream

Instructions

  • In 3-quart saucepan, saute onion, carrots, celery, basil and parsley in 1 tablespoon of butter. Add beef, broth and potatoes and bring to a boil. Reduce heat, cover and simmer 10 to 12 minutes.
  • Meanwhile, in small pan, melt remaining butter and stir in flour. Add to soup and return to a boil. Cook and stir for 2 minutes.
  • Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir until cheese melts.
  • Remove from heat and blend in sour cream. Serve.
