Donna’s Company Meatloaf

Ingredients

  • 1 pound ground beef
  • 1/3 cup ketchup
  • 1/4 cup chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon crushed red pepper flakes
  • 1/2 cup breadcrumbs
  • 1/4 cup onion minced
  • 2 teaspoons mustard

Topping:

  • 1/2 cup ketchup
  • 1 teaspoon mustard
  • 4 tablespoons brown sugar
  • Dried oregano leaves

Instructions

  • Preheat oven to 350 F.
  • Mix all meatloaf ingredients and place in a foil-lined loaf pan. Mix topping ingredients except for oregano.
  • Pour topping mixture over meat and sprinkle desired amount of oregano leaves over the top.
  • Bake 1 to 1-1/2 hours, or until the internal temperature reaches 160 F. Let the meatloaf rest 10-15 minutes before serving.
