Cream of Asparagus Soup
  1. Saute’ onion in butter for 3 minutes.
  2. Stir in flour.
  3. Add chicken broth slowly.
  4. Add asparagus pieces.
  5. Cover and simmer for 20 minutes or until asparagus is tender. This can be pureed, if desired.
  6. Add cream, salt and pepper to soup and reheat.
