Cream of Asparagus Soup
- 1 lb. asparagus cut into small pieces
- 1/2 med onion chopped
- 2 T. butter
- 2 T. flour
- 4 c. chicken broth
- 1/2 c. cream (optional)
- Salt and pepper to taste
- Saute’ onion in butter for 3 minutes.
- Stir in flour.
- Add chicken broth slowly.
- Add asparagus pieces.
- Cover and simmer for 20 minutes or until asparagus is tender. This can be pureed, if desired.
- Add cream, salt and pepper to soup and reheat.
