Portuguese Bean Soup

Ingredients

  • 1/2 c. smoked ham diced
  • 1/2 c. diced tomatoes with garlic and onions diced
  • 1/2 c. Celery diced
  • 1/2 c. Cabbage diced
  • 1/2 c. bell peppers diced
  • 1 c. cubed peeled potatoes diced
  • 3 c. canned red beans drained
  • 2 qts. tomato juice
  • 2 qts. Water
  • 2 bay leaves
  • Salt, pepper, liquid smoke to taste

Instructions

  • Saute all meat, then vegetables.
  • Add red beans, liquids and spices.
  • Cook slowly for 2 hours.
  • Remove bay leaves and serve.
