Raw Apple Cake

Ingredients

  • 1-1/2 C. vegetable oil
  • 2 C. sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 3 C. flour
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 3 C. fresh apples diced
  • 1/2 C. pecans
  • Cool Whip or Ice Cream as garnish (opt.)

Instructions

  • Mix oil, sugar, eggs, vanilla, flour, cinnamon, baking soda and salt; mix well.
  • Add apples and pecans.
  • Bake at 350 degrees for 1-1/2 hour in an angel food cake pan or 1 hour in a 9x13-inch pan.
  • Serve warm with Cool Whip or ice cream. Can also be served cool.
