Raw Apple Cake

Ingredients
- 1-1/2 C. vegetable oil
- 2 C. sugar
- 3 eggs
- 1 tsp. vanilla
- 3 C. flour
- 2 tsp. cinnamon
- 1 tsp. baking soda
- 1/4 tsp. salt
- 3 C. fresh apples diced
- 1/2 C. pecans
- Cool Whip or Ice Cream as garnish (opt.)
Instructions
- Mix oil, sugar, eggs, vanilla, flour, cinnamon, baking soda and salt; mix well.
- Add apples and pecans.
- Bake at 350 degrees for 1-1/2 hour in an angel food cake pan or 1 hour in a 9x13-inch pan.
- Serve warm with Cool Whip or ice cream. Can also be served cool.
