Tomato Pie

Ingredients

  • 1 9-inch pie shell baked and cooled
  • 2-3 large tomatoes thickly sliced
  • Pepper to taste
  • Fresh basil chopped
  • Fresh chives chopped
  • 2-3 green onions chopped
  • 1 cup mayonnaise
  • 1 cup cheddar cheese grated

Instructions

  • Preheat oven to 350 F.
  • Slice tomatoes, sprinkle with salt, place in a strainer and let drain. Pat dry.
  • Place drained tomatoes in the baked pie shell and sprinkle with pepper to taste.
  • Sprinkle with basil, chives and green onions.
  • Combine mayonnaise and cheddar cheese and spread over tomatoes.
  • Bake for 30 minutes. Note: use 1/4 teaspoon dried herbs if fresh aren’t available.
