Tomato Pie

Ingredients
- 1 9-inch pie shell baked and cooled
- 2-3 large tomatoes thickly sliced
- Pepper to taste
- Fresh basil chopped
- Fresh chives chopped
- 2-3 green onions chopped
- 1 cup mayonnaise
- 1 cup cheddar cheese grated
Instructions
- Preheat oven to 350 F.
- Slice tomatoes, sprinkle with salt, place in a strainer and let drain. Pat dry.
- Place drained tomatoes in the baked pie shell and sprinkle with pepper to taste.
- Sprinkle with basil, chives and green onions.
- Combine mayonnaise and cheddar cheese and spread over tomatoes.
- Bake for 30 minutes. Note: use 1/4 teaspoon dried herbs if fresh aren’t available.
