Watermelon Feta Mint Salad
Course Salad
Servings 12 servings
Ingredients
- 7-8 cups chilled watermelon cubed
- 1/2 c. olive oil
- 3 limes juiced
- 1-1/2 t. Salt
- 1/2 t. pepper
- 1 c. chopped fresh mint leaves
- 1-1/2 c. crumbled feta cheese
Instructions
- This needs to be made less than one hour before serving.
- Drain the watermelon in a colander.
- In a jar, combine oil, lime juice, salt and pepper. Shake to combine.
- In a large bowl, combine watermelon and dressing. Gently mix.
- Add mint and feta and mix carefully.
