Portuguese Bean Soup
Ingredients
- 1/2 c. smoked ham diced
- 1/2 c. diced tomatoes with garlic and onions diced
- 1/2 c. Celery diced
- 1/2 c. Cabbage diced
- 1/2 c. bell peppers diced
- 1 c. cubed peeled potatoes diced
- 3 c. canned red beans drained
- 2 qts. tomato juice
- 2 qts. Water
- 2 bay leaves
- Salt, pepper, liquid smoke to taste
Instructions
- Saute all meat, then vegetables.
- Add red beans, liquids and spices.
- Cook slowly for 2 hours.
- Remove bay leaves and serve.
