Peach Soup

  • 3 large ripe peaches
  • 1/2 c. apple or orange juice
  • 1 c. Water
  • 1/8 c. honey
  • Zest and juice from 1/2 lime
  • 1/8 t. Salt


  • Add peaches to a pan of boiling water for 20-30 seconds. Remove from pan and place in bowl of ice water.
  • Peel and pit peaches; discard. Put peaches in a blender. Add rest of ingredients and blend until smooth. Refrigerate until chilled.
  • Pour soup into cups or bowls and serve. Makes 3-4 servings.
