Peach Soup

Ingredients
- 3 large ripe peaches
- 1/2 c. apple or orange juice
- 1 c. Water
- 1/8 c. honey
- Zest and juice from 1/2 lime
- 1/8 t. Salt
Instructions
- Add peaches to a pan of boiling water for 20-30 seconds. Remove from pan and place in bowl of ice water.
- Peel and pit peaches; discard. Put peaches in a blender. Add rest of ingredients and blend until smooth. Refrigerate until chilled.
- Pour soup into cups or bowls and serve. Makes 3-4 servings.
