Tiffany Chips
Yields: 16-20
Ingredients
- 2 medium-sized russet potatoes
- 1 cup corn flake crumbs
- 3 tablespoons Parmesan cheese finely grated
- 1 tablespoon sesame seeds
- 1/2 cup butter melted
- Salt and pepper
- Sour cream optional
Instructions
- Preheat oven to 400 F.
- Scrub potatoes but do not pare. Cut in half lengthwise, then cut each half lengthwise into 4 or 5 wedges.
- Combine half of the cereal crumbs with Parmesan cheese and a pinch of salt and pepper in a shallow dish. Combine the other half of the crumbs with sesame seeds and a pinch of salt and pepper in another shallow dish.
- Dip potato wedges in melted butter. Coat one side with one crumb mixture, and the other side with the other crumb mixture.
- Place skin side down on a sheet pan and bake for 20-25 minutes.
- Serve with sour cream.
