Tiffany Chips

Yields: 16-20

Ingredients

  • 2 medium-sized russet potatoes
  • 1 cup corn flake crumbs
  • 3 tablespoons Parmesan cheese finely grated
  • 1 tablespoon sesame seeds
  • 1/2 cup butter melted
  • Salt and pepper
  • Sour cream optional

Instructions

  • Preheat oven to 400 F.
  • Scrub potatoes but do not pare. Cut in half lengthwise, then cut each half lengthwise into 4 or 5 wedges.
  • Combine half of the cereal crumbs with Parmesan cheese and a pinch of salt and pepper in a shallow dish. Combine the other half of the crumbs with sesame seeds and a pinch of salt and pepper in another shallow dish.
  • Dip potato wedges in melted butter. Coat one side with one crumb mixture, and the other side with the other crumb mixture.
  • Place skin side down on a sheet pan and bake for 20-25 minutes.
  • Serve with sour cream.
