Hugh’s Black Bean Burgers

Ingredients
- 1 cup rolled oats
- 1/2 cup walnuts
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 15-ounce can black beans drained and rinsed
- 1/2 cup mushrooms chopped
- 1/4 cup chopped onions fresh or pickled
- 3 tablespoons tahini
- 2 teaspoons soy sauce
- 2 teaspoons vegan Worcestershire
- 1 tablespoon ground flax seed
Instructions
- Preheat oven to 400 F and place a rack in the top slot.
- In a food processor, process the first 7 ingredients until a loose meal texture forms. Add remaining ingredients and process until well combined. You want it to have a texture similar to ground meat and not too smooth. If the mixture is too dry or won’t come together, slowly add water 1 tablespoon at a time.
- Once processed, form into 4 equal patties. Place patties on a parchment-lined baking sheet and bake for 30-40 minutes, flipping halfway through.
