Italian Pasta Toss

Ingredients

  • 1 box Corkscrew pasta
  • 6-10 oz. Provolone or Mozzarella cubed
  • 6 oz. sliced salami cut into strips
  • 1 head cauliflower chopped
  • 1 small zucchini chopped
  • 1 sweet red pepper chopped
  • 1 small red onion sliced
  • 1 15-oz. can pitted ripe olives
  • 1/4 C. Parmesan cheese grated
  • 1/4 C. parsley snipped
  • 3/4 C. olive oil
  • 1/2 C. red wine vinegar
  • 2 cloves garlic minced
  • 2 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/2 tsp. pepper
  • 2 medium tomatoes (opt.) diced

Instructions

  • Cook pasta according to directions. Drain. Rinse with cold water. Drain.
  • For Salad: Toss together pasta, cheese, salami, auliflower, zucchini, pepper, onion, olives, Parmesan cheese and parsley.
  • For Dressing: Whisk together oil, vinegar, garlic, basil, oregano and pepper. Pour over salad. Toss to coat. Cover and chill 4-24 hours. Just before serving, add tomatoes. Toss gently.
