Marshmallow Pears

Ingredients

  • 1 29-ounce can pear halves
  • 3 teaspoons sugar
  • 1/4 teaspoon cinnamon
  • 1 lemon
  • large marshmallows

Instructions

  • Reserving the juice, drain the pears and place them cut side up in an 8-inch square microwave-safe dish. Add 6 tablespoons of pear juice to the bottom of the dish.
  • Mix the sugar and cinnamon together and sprinkle over pears.
  • Zest and peel the lemon, reserving the zest. Cut paper-thin slices of the lemon and place a slice on each pear. Top each pear with a marshmallow.
  • Microwave on high for 4 minutes. Keep an eye on the marshmallows while cooking to make sure they don’t explode or burn. Top the marshmallows with lemon zest.

Notes

Editor’s note: I left the lemon peel on when I prepared this dish. Don’t do that.
