Potatoless Potato Salad

Ingredients
- 1 head cauliflower
- 2 c. Celery diced
- 1 c. onion diced
- 4 hardboiled eggs diced
- 2 c. mayo
- 1/4 c. Vinegar
- 1/4 t. pepper
- 1 t. Salt
- 2 t. sweetener any kind
Instructions
- Cut the cauliflower into florets and steam cook until tender.
- Combine cooked cauliflower, celery, onion and eggs and set aside.
- Mix mayo, vinegar, pepper, salt and sweetener together.
- Pour over cauliflower mixture and mix well.
